Ever since I was a little girl, I have loved baking. I started baking when I was about 10 years old and when I was 12 or 13 I started having the baking booth at our annual Muscular Dystrophy carnival that all the kids in the neighborhood put on. My booth always sold out! I even sold homemade pies to the neighbors when I was about 12. I have included some of my favorite recipes for you. I hope you enjoy them.
Here is my most requested recipe!
BUTTERFINGER CAKE
1 Box of chocolate cake mix, any kind.
1 Can Sweetened Condensed milk like Eagle Brand.
1 container of Cool Whip
2 large Butterfinger Candy Bars.
Bake the cake as directed on the package. When the cake comes out of the oven, poke holes in it all over and pour in 1 can of Eagle Brand Sweetened condensed milk. When the cake cools, frost it with the cool whip. Put your butterfinger candy bars in a plastic bag and smash them with a hammer (this works best if the candy bars are frozen) and then sprinkle them on the cake. Enjoy!
PECAN CRESCENT COOKIES
1 cup butter
1/2 cup sugar
1 teaspoon vanilla
2 cups all purpose flour
1 cup finely chopped nuts (pecans or walnuts).
Powdered sugar for dusting
Cream the butter, sugar and vanilla. Stir in the flour and pecans. Hand form into 1" balls then roll between the palms of your hands, forming a rope, 1/4" to 1/2" in diameter. Cut the rope into 2" to 3" lengths. Bend into a crescent shape. Place on ungreased cookie sheet and bake at 325 degrees for 20-22 minutes. Let cool slightly on sheet, then carefully remove to cool on racks and dust with powdered sugar. (Note: I find that these turn out better when I dredge them in the powdered sugar twice).
PECAN TASSIES
1 cup flour
1 3 oz pkg cream cheese
1/4 teaspoon salt
1 stick soft butter or margarine
Blend as you would for pie crust. Refrigerate 1 hour. Make 1" balls and form into a smlal tart pan.
Filling:
2/3 cup sugar
2/3 cup chopped nuts.
1/4 teaspoon salt.
1 tablespoon melted butter
1 egg
Mix together and place in pastry with teaspoon . Bake at 400 degrees for 14 minutes.
My husband loves these!
CREAM CHEESE DAINTIES
1/2 cup butter, softened.
3 ounces. cream cheese, softened.
1 teaspoon sugar
1 cup flour.
1 cup preserves, any flavor, or lemon curd
nuts of choice, optional
Preheat oven to 375 degrees. Mix well the first 4 ingredients. Divide dough in half and chill 1 hour. On lightly floured surface, roll out 1/8" thick. Use a 2 inch diameter round cookie cutter to cut 3 dozen bases. Place on ungreased cookie sheet. Put 1/4 teaspoon preserves or lemon curd in the center of each base. Sprinke with nuts (optional). Use a 1 inch diameter round cookie cutter to cut out tops from remaining dough, rerolling scraps as necessary. Place a 1" top over the preserves on each 2 inch base. Bake 8-10 minutes. Store in sealed container.
Note: I use the 2 inch cutter for the tops and cut out a 1" hole in the center.

SANTA'S WHISKERS
1 cup butter or margarine, softened.
1 cup sugar
2 tablespoons milk
1 teaspoon vanilla
2-1/2 cups all purpose flour
3/4 cup finely chopped red or green candied cherries (or both)
1/2 cup finely chopped pecans.
3/4 cup flaked coconut.
In mixing bowl cream togher butter or margarine and sugar. Blend in milk and vanilla. Stir in flour, chopped candied cherries and chopped pecans. Form dough in to two 8" rolls. Roll in flaked coconut to coat outside. Wrap in waxed paper or clear plastic wrap; chill thoroughly.
Cut into 1/4 inch slides. Place on ungreased cookie sheet. Bake at 375 degrees until edges or golden, about 12 minutes. Makes about 60.
PUMPKIN PIE CAKE
1- 29 ounce can of pumpkin puree
1 - 12 fluid oz can of evaporated milk.
3 eggs
1 cup white sugar
1/2 teaspoon salt
4 teaspoons pumpkin pie spice.
1 (18.5 oz package of yellow cake mix.
3/4 cup butter
1 cup chopped walnuts
Preheat oven to 350 degrees.
Lightly grease one 9 x 13 inch pan.
In a large bowl, combine the pumpkin, evaporated milk, eggs, sugar, salt and pumpkin pie spice. Mix well. Pour batter into the prepared pan.
Sprinkle the dry cake mix evenly over the pumpkin mixture. Melt the butter or margarine and drizzle it over the cake mix. Sprinkle walnuts over the top.
Bake for 55-60 minutes or until done.
NOTE: Pumpkin pie spice is very expensive. You can make you own by using 1/2 teaspoon cinammon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg, 1/8 teaspoon allspice.
CARROT CAKE
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
Mix dry ingredients together. Set aside
In a separate bowl mix
4 eggs
2 cups sugar
1-1/2 cups oil
1 teaspoon vanilla
Mix together and add dry ingredients.
Add to this mixture
2 cups grated carrots.
1 cup of chopped walnuts or pecans
Bake at 350 degrees.
Baking times vary depending on size of pan and your oven
13 x 9" pan 30-40 minutes.
8" layers (3) 25-30 minutes
9" layers (2) 30-35 minutes.
CREAM CHEESE ICING
1 large package of cream cheese (room temperature)
1/2 stick or 1/4 cup butter or margarine (room temperature).
1 pound package of confectioner sugar
1 teaspoon vanilla
milk 1 or 2 teaspoons to thin icing (if needed).
Cream together butter and cream cheese until smooth.
Add confectioners sugar a little at a time
thin with 1 or 2 teaspoons of milk if necessary.
Spread on cooled cake. Sometimes I sprinkle nuts on top, that is optional.
This cake is also good with no icing or just sprinkle some powdered sugar on top.
I love to carry this cake to pot lucks and I can't tell you how many I have given as Christmas presents to my neighbors and bosses, etc.
JAM CAKE
1-1/2 cups brown sugar
1 cup of white sugar
2 teaspoons baking soda
1 teaspoon of cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
3 cups plain flour
1 cup raisins.
4 eggs
1 cup of jam
1 cup of oil
1-1/2 cups buttermilk
1 cup of nuts
Bake at 350 degrees for 30-40 minutes.
ITALIAN CREAM CAKE
1 box yellow cake mix
1 small box vanilla instant pudding
1/4 teaspoon cinnamon
1/2 cup chopped pecans or walnuts
1 cup crushed pineapple
1 cup coconut
Mix cake mix according to directions. Add pudding and cinnamon and beat with electric mixer. Fold in nuts, pineapple and coconut.
Bake according to package directions.
Frost with cream cheese icing (recipe above) and sprinkle with chopped nuts.
PINEAPPLE SQUARES
1-1/2 cups sugar
2 cups flour
1-1/2 teaspoon baking soda
1/2 teaspoon salt
1 medium size can of crushed pineapple (15 ounces)
2 eggs
Mix with spoon. Pour into 9 x 13" pan that has been greased and floured.
Bake for 30 minutes at 350 degrees.
Icing - (pour on while warm).
1-1/2 cups sugar
1 small can evaporated milk
Boil for 4 minutes stirring constantly.
Remove from heat.
Add
1 cup chopped nuts
1 cup coconut
1 teaspoon vanilla
My friend Joan brought me these when I had surgery. They were soooo good.
ORANGE SLICE CAKE
Sift together and set aside 4 cups of flour and 1/2 teaspoon salt. In a separate bowl add 1 pound of orange slice candy (chopped), 1 package (8 ounces) of chopped pitted dates, 2 cups of chopped pecans, and 1 can (3-1/4 oz ) of coconut. Mix all of this with the flour and salt.
In another bowl add 1 cup of butter cream until soft. Gradually while creaming butter add 2 cups sugar. Then add 4 eggs, one at a time, beating after each addition.
Combine 1 teaspoon soda, 1/2 cup buttermilk. Add this alternately with the flour mixture. Blend well and turn into a 10" bundt cake pan (greased and floured).
Bake at 300 degrees for 2 hours. Put a pan of water under cake while baking.
Remove from oven and while still hot and in the pan mix 2 cups of confectioners sugar and 1 cup of orange juice. Pour over hot cake and let cool.
OLD KENTUCKY POUND CAKE
2-1/2 cups self rising flour.
2 cups sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg or cloves
4 eggs separated
1-1/2 cups oil
8 ounces crushed pineapple.
1 cup nuts
Mix the flour, sugar and spices
Add oil and beaten egg yolks to flour mixture
Beat egg whites and fold into this.
Add crushed pineapple and nuts.
Mix all well and put into greased and floured tube pan.
Bake for 1 hour and 15 minutes at 350 degrees.
GLAZE
1 cup sugar
1/2 teaspoon soda
2 Tablespoons white syrup
1/2 cup buttermilk
1 stick butter or margarine.
Put in a pan and bring to a boil.
Boil for 5 minutes.
Pour over warm cake while it is still in the pan.
